Easy Chicken Fried Rice

This is a super simple way to use up some leftover rice and chicken, and it’s delicious and quick (bonus points).

Easy Fried Rice

Serves 2-4

Ingredients

  • 2c cooked rice
  • 1/2c cooked chicken, diced
  • 1/2c frozen peas (or mixed peas and carrots)
  • 2 eggs
  • 2 to 3tbsp gluten free soy sauce
  • Pepper to taste
  • 1 medium scallion, chopped (optional)

In a skillet, add the rice, chicken, and veggies. Stir until hot, and then mix in the soy sauce and cook for another 2-3 minutes. Make a well in the centre and break both eggs into it. Let them sit for 1-2 minutes, until the bottoms begin to set, then break the yolks and scramble into the rice mixture. Add the scallions now, if using. Cook the fried rice until the eggs are done. Salt and pepper to taste, and serve.
